swab-CHEFCharm CHEF (Cooking Heat EFficiency) Test is the first single-use, post-process indicator of compliance with the food time-temperature profile. In the cooking of meat tissue, acid phosphatase destruction closely mirrors pathogen destruction. Designed to quickly detect undercooked meat in cooked products, the CHEF Test measures phosphatase activity as an indication of meat "doneness". The CHEF Test is read on the Charm novaLUM luminometer, enabling users to benefit from the ability to measure 9 different tests on a single system.
