The Charm CHEF® (Cooking Heat EFficiency) test is the first single-use, post -process indicator of compliance with the food time/temperature profile.

Designed to quickly detect undercooked meat in cooked products, the Charm CHEF test measures phosphatase activity as an indication of meat "doneness". In the cooking of meat tissue, acid phosphatase destruction closely compares with E.coli reduction.
